Pastinaca sativa

Mid 1800s heirloom variety. Thick wedge-like creamy white tap roots. Allow this variety to experience several hard frosts to really sweeten up. Roasted parsnips are one of our favorite candy-sweet treats in the dark half of the year. An excellent winter keeper.


Growing Instructions:

Sow seeds as soon as soil can be worked in very early spring.

Sow 1 1/2 inches apart. Thin to 3 inches apart.

Space rows 12 inches apart.

Plant an annual legume cover crop in the fall to prepare the bed. Mix in a good compost and a sprinkle of wood ash at time of sowing.

Harvest:

Harvest after some heavy frosts for full flavor, or they can be left in place for spring harvest.
