Arctium lappa
A culinary variety from Okinawa, Japan and an integral part of the island’s healthful cuisine. Grown as an annual for its tasty tap roots known for their high vitamin and mineral content and healing properties. Burdock is a biennial, and sometimes a short-lived perennial, but should be grown as an annual and harvested in the fall of their first year to avoid spread of seed. Growing Information:
Direct sow only, as to not disturb the developing taps roots. Direct sow anytime from four weeks before last frost until after last frost.
Sow plants 2” apart thinning to 6”

Full sun to partial shade in well drained soil. Hardy to zone 3
Harvest after first frost. To avoid breaking the roots, dig a ring or trench around the root system and carefully use a fork to gently rock the roots free.
